Spirit in Niagara Small Batch Distillery (SIN) is a dynamic business that follows a farm-to-bottle process to create distinctive beverages. The distillery has direct access to a significant volume of wasted fallen tender fruit (peaches, pears, plums) from their partners A.J. Lepp Orchards and the Niagara Orchard & Vineyard Corp. SIN uses the excess product to produce its gin, vodka, plumoncello, bourbon, flavoured spirits, which helps to reduce the food waste of its partners. NPG was proud to serve as planning partners for the development of their site.

As project managers, John Henricks and Heather Sewell led the process of acquiring the Official Plan Amendment, Zoning By-Law Amendment, and Site Plan Approvals for the development of the site. Working with relatively new Ministry of Agriculture, Food and Rural Affairs (OMAFRA) guidelines, the NPG team was able to deliver a groundbreaking planning justification report to acquire approval for this new agriculture-related business. In addition to this unique accomplishment, Spirit in Niagara became the first privately serviced distillery in Niagara-On-The-Lake, independent from municipal services.

to the Past
The 10,000 sq. ft. distillery includes a retail store, dining, and catering spaces that can hold 180 guests and a 4,500 sq. ft. production area. The distillery features a new structure built in the style of an 1800s era Queenston manor house that holds a guest space recently constructed by repurposing components of a 150-year-old fruit packing building.
Spirit in Niagara has all the necessary equipment on site to create their small-batch spirits, including a 500 gal. copper/stainless pot still, two 14’ copper vodka columns, and a continuous stripping column.
